Description

Baked apples and pears with fruit and pecans—it's sweet and satisfying. What's not to love?

Ingredients
  • 2 apples (peeled, cored)
  • 1 pear
  • 1 ounce pecans (chopped)
  • 6 prunes (pits removed, chopped)
  • 1/4 cup raisins (chopped)
  • 1 teaspoon cinnamon
  • 4 tablespoons vegan butter
  • 4 tablespoons pure maple syrup
Instructions
  1. 1

Peel the apples, leaving them whole. If necessary, trim the bottoms slightly so they sit flat. Remove the core with a small paring knife or an apple corer tool. Use a small spoon or melon baller to scrape out some of the apple's flesh to make room for the stuffing. Don't go through to the bottom; the filling will fall through.

  2. 2

Peel and cut the pear in half. Scoop out the core in both halves.

  3. 3

Combine the pecans, prunes, and raisins in a small bowl.

  4. 4

Arrange the apples and pears in an oven-proof dish. Generously stuff the nut mixture into the apple and pear cavities. Top each with a light sprinkling of cinnamon, one tablespoon of margarine, and a drizzle of maple syrup.

  5. 5

Cover loosely with foil and bake in a preheated oven for 20 minutes.

Remove the foil and continue baking for approximately 10 - 15 minutes or until golden.

  6. 6

Divide the apples and pears carefully between serving plates and pour over any pan juices. Serve warm by themselves or with a dollop of vegan ice cream, and enjoy!
