Description

A traditional blueberry pie with an irresistible crumble topping.

Crust:
  • 1 cup all purpose flour (Substitute gluten free for a gluten free crust.)
  • 1/3 cup vegan butter
  • 1/2 teaspoon salt
  • 3 tablespoons water (ice cold)
  • Filling:
  • 4 cups blueberries (fresh or frozen)
  • 3/4 cup sugar
  • 3 tablespoons all purpose flour (Substitute gluten free for a gluten free filling.)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • Crumb Topping:
  • 1/4 cup vegan butter
  • 1/4 cup sugar
  • 1/2 cup all purpose flour (Substitute gluten free for a gluten free topping.)
Instructions

    Crust:

    Beat the water and vegan butter together. Stir in the salt.

    Mix in the flour just until incorporated. Don't overmix.

    Roll the dough in between two sheets of parchment paper. Roll it out to an even thickness, and just an inch or two wider than your 9-inch pie pan.

    Place the crust in the pan, letting the excess hang over the sides for now.

    Filling:

    In a large mixing bowl, combine the blueberries and sugar.

    Add in the salt, cinnamon, nutmeg, and flour, and toss gently to coat.

    Turn the blueberry filling out into the pie pan.

    Fold any excess pie crust around the edges in and over the edges of the blueberries.

    Crumb Topping:In a small mixing bowl, combine the vegan butter, flour, and sugar, then, mash it together with a fork until it resembles coarse crumbs.

    Sprinkle the topping over the blueberries evenly.

    Bake:Blueberry pieBake at 400 F degrees for 35 to 40 minutes, until the top is golden and bubbly.
