Description

Golden curry swirls into creamy coconut milk, creating a fragrant sauce that hugs every crisp-edged piece of tofu.

Garlic and fresh basil add earthy warmth, while a squeeze of lime lifts the flavors into something bright and joyful.

A drizzle of sriracha brings a gentle, spirited heat. Cozy, vibrant, and soul-soothing, this dish is comfort wrapped in spice.

Ingredients
  • 4 tablespoons butter
  • 12 ounces extra firm organic tofu
  • 2 large cloves of garlic (minced)
  • 1 yellow onion (diced)
  • 1 tablespoon curry powder
  • 13.5 ounces coconut milk
  • 2 tablespoons pure maple syrup
  • 1/4 teaspoon salt
  • juice of one lime
  • 10 whole fresh basil leaves (chiffonade)
  • 1 tablespoon sriracha or other hot sauce (optional)
Instructions

    Press the tofu using a Tofu Press and remove as much liquid as possible. Then slice the tofu into approximately 1-inch pieces. 

     

    If you don't have a press, wrap the tofu in a clean towel and place it on a plate with a rim. Place a heavy object, such as a frying pan, on top of the tofu and wait for several minutes.

    Next, melt two tablespoons of butter in a large skillet over medium heat. Add the tofu and cook, turning the tofu often until all sides are golden and crisp. Transfer to a plate lined with a paper towel and set aside.

    Melt two more tablespoons of butter in the skillet and add the garlic and onions.

    Cook, stirring continuously for about 4 to 5 minutes. Sprinkle the curry powder over the onions and cook for an additional 1 to 2 minutes, until fragrant.

    Reduce the heat to medium-low and add the coconut milk. Stir until well combined.

    Add the agave, salt, and lime juice, and bring the mixture to a gentle simmer. Cook for an additional 3 to 5 minutes, until it thickens.

    Add the tofu back to the pan and toss to coat. Finally, stir in the basil and the hot sauce (if using).

    Serving suggestions:

    Serve the tofu and extra sauce over a bed of cooked rice, rice noodles, or a chopped green salad. Garnish with additional basil and lime wedges if desired.
