This Creamy Guacamole Pasta takes the best parts of your favorite guacamole and turns them into a luscious plant-based sauce that hugs every part of the pasta.

Ripe avocados blended with fresh basil, zesty lime, garlic, and silky avocado oil create a rich, dreamy sauce that's both satisfying and light on the palate.

Tossed with al dente pasta (or spiralized zoodles for a low-calorie twist) and finished with a sprinkle of vegan parmesan and basil, it's a simple yet unforgettable meal that feels indulgent without the dairy.

Ingredients
  • 10 ounces uncooked pasta (or make zoodles (see below))
  • 2 cloves of garlic
  • 1/4 cup basil leaves (lightly packed, plus more for serving)
  • juice of one lime
  • 1 tablespoon water
  • 1 tablespoon extra virgin olive oil
  • 1 large avocado (pit removed)
  • pinch of salt
  • freshly ground black pepper
  • 2 tablespooons vegan parmesan
Instructions

    Bring a large pot of heavily salted water to a boil. Cook the pasta according to the package directions.

    Use gluten-free pasta as an option, or if you have a zoodler, also known as a Vegetable Spiralizer, it can be a delicious way to increase your intake of veggies and reduce your calorie intake! 

    You can eat the zoodles raw, or heat a tablespoon of olive oil in a skillet, and drop the noodles in. Lightly season with salt and pepper, and cook for a minute or two over medium-high heat, stirring often. Remove from the heat and set aside.

    Meanwhile, add the garlic and basil to a Food Processor and pulse a few times to mince.

    Add the lemon juice, water, avocado, oil, sea salt, pepper, and vegan parmesan.

    Continue to process, scraping down the sides as needed.

    Make the sauce as creamy as you like or leave a few chunks of whole avocado if that's your preference.

    Drain the pasta, if using, and return it to the pot.

    Add the avocado mixture to the pasta (or zoodles) and stir until well combined.

    Sprinkle with extra parmesan if desired, and garnish with fresh basil.
