  • 1/2 cup vegan butter
  • 4 cups Shiitake mushrooms (sliced to 1/4-inch thick)
  • 1/4 cup yellow onion (chopped)
  • 4 cloves of garlic (minced)
  • 2 cups non-dairy milk
  • 1/2 cup dry white wine (can sub vegetable stock)
  • juice of one lemon
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon basil
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 16 ounces pasta of choice
  • 1/2 cup vegan parmesan (grated)
  • 1/2 cup vegan mozzarella (grated)
  • fresh chives and basil (for garnish)

    Melt the vegan butter in a large skillet over medium-high heat.

    Add mushrooms, onion, and garlic to the skillet. Sauté until mushrooms are tender, stirring frequently, about 5 minutes.
