Ingredients
  • 1 cup vegan butter
  • 1/2 teaspoon thyme
  • 1/2 teaspoon rosemary
  • 1/4 teaspoon sage
  • 1/8 teaspoon nutmeg
  • 1 tablespoon parsley
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon salt
  • 1 cup diced onion
  • 1 1/2 cups diced celery
  • 2 cloves minced garlic
  • 8 cups dried bread cubes (bread crumbs will work too!)
  • 3 cups vegetable broth

    Heat the butter over medium heat until melted.

    Stir in thyme, rosemary, sage, nutmeg, parsley, black pepper, and salt.

    Add the celery and onions and cook until softened but not browned—3 to 5 minutes.

    Add the garlic and cook for one minute more, then remove from the heat and set aside.

    Place the bread cubes in a large mixing bowl. Fold in the celery and onion mixture until combined.

    Add the vegetable broth and stir until the bread cubes are moistened.

    Grease or use a non-stick spray in a 3 1/2 to 4-quart slow cooker.

    Transfer the stuffing mixture to the crockpot, and cook on high for 30 minutes, then reduce the heat to low and continue cooking for 2 hours or until hot and cooked through. The temperature should reach 165° throughout.

    If the stuffing is done before the meal is ready, it can remain on the warm setting until ready to serve.
