The Cake
  • 3/4 cup whole-wheat pastry flour
  • 3/4 cup all purpose flour
  • 1 cup sugar
  • 1/4 cup natural unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup warm water
  • 3 tablespooons extra-light virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon prepared coffee (optional)
  • 1 teaspoon pure vanilla extract
  • The Frosting
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup non-dairy milk
  • 2 tablespoons peanut-butter
  • Garnish
  • 1 cup mixed berries
  • 1/4 cup coconut flake

    The Cake

    Preheat the oven to 300°F. Lightly grease one 9-inch round cake pan.
