This Easy Minestrone Soup is loaded with colorful vegetables and plenty of classic Italian-inspired flavor. Onion, carrot, celery, and garlic create a savory base, while diced tomatoes, tomato paste, vegetable broth, and Italian seasoning come together in a rich, satisfying broth. Kidney beans add heartiness, and mixed vegetables make every spoonful a little different. 

Tender macaroni turns this vegetable-packed soup into a filling meal that comes together in 30 minutes. Pair it with warm crusty bread and a crisp garden salad for an easy lunch or dinner that brings simple, feel-good comfort to the table.

Ingredients
  • 2 tablespoons extra virgin olive oil
  • 1/2 yellow onion (diced)
  • 1 medium carrot (diced small)
  • 1 rib celery (diced small)
  • 2 large cloves of garlic (minced)
  • 1 bay leaf
  • 6 cups low-sodium vegetable broth
  • 1 teaspoon italian seasoning
  • 1/8 teaspoon cayenne pepper
  • 15 ounces canned petite diced tomatoes
  • 3 tablespoons tomato paste
  • 1 cup frozen mixed vegetables
  • 15 ounces canned kidney beans (or other bean of choice, drained and rinsed)
  • 1 cup macaroni pasta (use GF pasta to make this dish gluten-free)
  • 1 teaspoon sugar (trust us)
Instructions

    Add the olive oil to a large soup pan over medium heat.

    Add the onion, carrot, celery, and garlic, and sauté for 5 minutes or until the vegetables have softened.

    Stir in the vegetable broth, diced tomatoes, tomato paste, bay leaf, Italian seasoning, and cayenne pepper, and bring to a boil.

    Stir in the frozen mixed vegetables and canned beans, and bring the mixture back up to a boil.

    Stir in the pasta and continue to simmer over medium-low heat for 8 to 10 minutes, or until the pasta is al dente.

    Finish by stirring in 1 teaspoon of sugar. Adjust seasonings to taste. Remove the bay leaf before serving.

    Serve with crusty bread and a garden salad for a delicious meal.
