Description

A great garden salad is all about freshness, color, and plenty of satisfying crunch. This Classic Garden Salad starts with a crisp combination of iceberg and romaine lettuce, then leaves the rest up to you. Choose at least five favorites—tomatoes, cucumber, carrots, bell peppers, broccoli, radishes, mushrooms, or whatever looks especially fresh from the garden or market.

Make it heartier by adding chickpeas, black beans, nuts, seeds, avocado, olives, or crunchy croutons, then toss everything with your favorite dressing. With so many delicious combinations to explore, this is less of a strict recipe and more of an invitation to build a fresh, colorful salad exactly the way you like it.

Ingredients
  • 1/2 head iceberg lettuce (rinsed, and chopped)
  • 1 bunch romain lettuce (rinsed, and chopped)
  • 1 pint cherry tomatoes (halved)
  • 1 medium English cucumber (sliced)
  • 1 large carrot (grated)
  • 1/4 medium red onion (thinly sliced)
  • 1 medium bell pepper (any color, cored and sliced)
Instructions
  1. 1

Place all of the salad ingredients into a large bowl and toss to combine.

  2. 2

If you are using a vinaigrette dressing, pour it over the salad and toss well. Otherwise, serve the dressings on the side.

Other additions you might consider to make your salad a hearty meal include avocado, beets, beans, broccoli, cauliflower, mushrooms, olives, pepperoncini, radish, sprouts, croutons, or seeds. Add any or all to make your salad your own.
