Ingredients
  • 56 ounces petite diced tomatoes (2 28-ounce cans)
  • 8 vine ripened tomatoes (small dice)
  • 1 white or red onion (small dice)
  • 1 bunch scallions (diced)
  • 1 bunch cillantro (big stems removed, roughly chopped)
  • 4 garlic cloved (minced)
  • 2 jalapeno peppers (seeded and minced (for more heat, include some of the seeds))
  • 2 serrano chili peppers (seeded and minced (for more heat, include some of the seeds))
  • 2 yellow chili peppers (seeded and minced (for more heat, include some of the seeds))
  • 2 tablespoons cumin
  • 1 tablespoon dried oregano
  • 1 tablespoon salt
  • 2 limes (juiced)
