This creamy Vegan Chick’n Salad is packed with satisfying texture and bright, fresh flavor in every bite. Tender chick’n is tossed with crunchy celery, sweet peas, tangy Dijon mustard, lemon juice, pickle relish, and a creamy dressing, while fresh dill adds a burst of herbaceous goodness that ties everything together.

Ingredients
  • 2 Gardein Chick'n Scallopini cutlets (small dice)
  • 1/4 cup vegan mayonnaise
  • 1 tablespoon lemon juice
  • 1 garlic clove (minced)
  • 1 teaspoon dijon mustard
  • 2 tablespoons pickle relish (sweet or dill)
  • 1/2 cup baby peas (fresh or frozen)
  • 2 ribs celery (small dice)
  • 1 tablespoon fresh dill (chopped (optional))
Instructions

    Cook the Gardein cutlets as directed on the package. Allow to cool completely, then chop into 1/2" to 1" cubes.

    Whisk the vegan mayo, lemon juice, garlic, mustard, and relish in a medium-sized bowl.

    Add the chopped cutlet, peas, celery, and dill to the vegan mayo mixture and stir gently until all is combined.

    Chill for 1 to 2 hours before serving to allow all of the flavors to come together.
