Description

An easy-to-make vegan 6-layer dip is the perfect appetizer and a great addition to your next potluck! It begins with a can of vegetarian refried beans seasoned to perfection and layered beneath fresh veggies and herbs. Grab your favorite tortilla chips and dig in!

Ingredients
  • 1 can refried beans (vegetarian)
  • 1/2 teaspoon each; onion, garlic, chili, cumin powder
  • 1/3 cup water
  • 3 small to medium roma tomatoes (diced)
  • 1 bunch scallions (green and white parts)
  • 1 whole juice of a lime
  • 1 tablespoon cilantro (chopped)
  • 12 ounces vegan sour cream
  • 20 ounces picante sauce (strained)
  • 1 cup guacamole
  • 10 ounces vegan monterey jack or cheddar cheese (shredded)
  • 8 ounces black olives (drained and sliced)
  • 1 each red and yellow bell pepper (diced small)
  • 1 whole jalapeno (diced small (optional))
How to create the perfect 6-layer dip
    Instructions:

    Combine the beans, onion, garlic, chili powder, and cumin in a saucepan over medium heat. Stir in the water and cook until the beans start to simmer. Remove from heat and cool slightly. Spread the bean mixture evenly into a clear glass serving bowl. Set the bowl aside to cool or refrigerate during the next step.

    Prepare the veggie mixture by chopping and dicing the tomatoes, scallions, and bell peppers. Add them to a medium-sized bowl. Stir in the lime juice and cilantro. Set aside.

    Layered Dip

    Begin by spreading the vegan sour cream over the bean mixture. Next, add the strained Picante sauce by spreading it evenly over the sour cream, then add the vegetable mixture, a layer of guacamole, and the shredded cheese. Finally, garnish with a few diced tomatoes, green onion, and freshly chopped cilantro.

    If you prefer to make individual servings, divide and layer the bean dip evenly in 8 clear glass ramekins. Then, follow the directions above to assemble each one.
