A smooth and delicious avocado mayo you will enjoy on sandwiches, veggie burgers, and more!

Ingredients
  • 2 avocados (ripe)
  • 2/3 cup vegetable oil
  • 1/4 cup aquafaba (chickpea water)
  • 1 tablespoon fresh lime juice
  • 1 teaspoon dijon mustard (may substitute yellow mustard)
  • 1 pinch salt and pepper
Instructions

    Mini food processor

    Place all of the ingredients into a mini food processor.

    Blend until smooth.

    That's it! The avocado mayo is now ready to use. Place any unused portion in an airtight container and enjoy within 3 days.
