Description

Salty, sweet, crunchy caramel corn.

Ingredients
  • 12 cups prepared popcorn
  • 1 cup vegan buttter
  • 2 cups brown sugar (packed)
  • 1/2 teaspoon sea salt
  • 1/2 cup light corn syrup
  • 1 teaspoon baking soda
  • 1/2 cup peanuts (optional)

    Pop the Popcorn.

    Measure out 12 cups of popcorn into a large Roasting Pan.

    Set it aside.

    Preheat oven to 200 degrees F.

    In a medium-sized saucepan, combine the vegan butter, brown sugar, salt, and corn syrup over medium heat. Bring the mixture to a boil, stirring often.

    Continue to boil for 5 minutes. Remove from the heat and stir in the baking soda until well combined.

    Pour the sugar mixture over the popcorn and toss in the peanuts now, if using.

    Using a large spoon or spatula, stir the popcorn to coat it evenly.

    Place the roasting pan in the oven and bake for 1 hour, stirring every 15 minutes.

    Spread the caramel corn onto waxed paper to cool.

    Once cooled, place in a serving bowl or individual serving bowls and enjoy!
