Instructions

  1. Pop the popcorn (enough to make 12 cups of popcorn).

  1. Measure out 12 cups of popcorn into a large Roasting Pan.

    Set it aside. 

  1. Preheat oven to 200 degrees F.

     

  1. In a medium-sized saucepan, combine the vegan butter, brown sugar, salt, and corn syrup over medium heat. Bring the mixture to a boil, stirring often.

    Continue to boil for 5 minutes. Remove from the heat and stir in the baking soda until well combined.

     

     

  1. Pour the sugar mixture over the popcorn and toss in the peanuts now, if using.

     

  1. Using a large spoon or spatula, stir the popcorn to coat it evenly.

     

  1. Place the roasting pan in the oven and bake for 1 hour, stirring every 15 minutes.

     

  1. Spread the caramel corn onto waxed paper to cool. 

  1. Once cooled, place in a large serving bowl, individual serving bowls, or cellophane bags if gifting!
