This Cowboy Caviar is sunshine in a bowl — a colorful, zesty mix of sweet corn, black-eyed peas, black beans, crunchy bell pepper, juicy tomato, red onion, and bright lime all tossed in a tangy Mexican vinaigrette.

Chill it to let the flavors mingle, then scoop it up with crunchy tortilla chips, serve it on a bed of greens, or roll it into a soft tortilla for a fresh, fun meal.

Perfect for gatherings, game day, or whenever you want a delicious plant-based snack.

Cowboy Caviar:
  • 12 ounces fresh or frozen corn
  • 15 ounces canned black-eyed peas or lentils (drained and rinsed)
  • 15 ounces canned black beans (drained and rinsed)
  • 1 jalapeno (seeds removed, and minced)
  • 1 Roma tomato (diced)
  • 1 red or green bell pepper (diced)
  • 1/2 cup grape tomatoes (halved)
  • 1 avocado (diced)
  • 1/3 cup red onion (diced)
  • 1/4 cup fresh cilantro (chopped)
  • Mexican Vinaigrette:
  • 1/2 cup extra virgin olive oil
  • 1/2 cup fresh lime juice
  • 1 talespoon honey (or maple syrup if vegan)
  • 4 cloves garlic (pressed or minced)
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
Instructions

    Caviar:

    Start at the top of the ingredient list and work your way down, adding everything to a large bowl. Toss gently to combine.

    Dressing:

    Place all of the ingredients into a mason jar, blender, or food processor.

    Seal and shake or blend until everything is well combined.

    Gently fold the dressing into the caviar. Refrigerate for about 30 minutes to give the flavors time to mingle.

    Gently toss the caviar again just before serving. Serve with lime wedges and tortilla chips.

    Enjoy within 2-3 days. 

    This dressing is delicious on garden salads and cucumber-and-tomato salads as well.
