Description

Colorful, crisp, and bursting with fresh flavor, this Cowboy Caviar is a recipe you’ll want to make on repeat. Sweet corn, hearty beans, juicy tomatoes, crisp peppers, onion, and fresh herbs are tossed with a bright, tangy dressing that brings it all together into a delicious blend of savory, sweet, and citrusy flavors.

Serve it with tortilla chips, spoon it over tacos or grain bowls, or enjoy it as a refreshing side at barbecues, potlucks, and family gatherings. It’s quick to prepare, even better after the flavors have mingled, and guaranteed to disappear fast wherever it’s served.

Instructions

  1. Caviar:

Start at the top of the ingredient list and work your way down, adding everything to a large bowl. Toss gently to combine.

  1. Dressing:

Place all of the ingredients into a mason jar, blender, or food processor.

Seal and shake or blend until everything is well combined.

  1. Gently fold the dressing into the caviar. Refrigerate for about 30 minutes to give the flavors time to mingle.

  1. Gently toss the caviar again just before serving. Serve with lime wedges and tortilla chips.

    Enjoy within 2-3 days.

This dressing is delicious on garden salads and cucumber-and-tomato salads as well.
