Cream Cheese Topping
  • 2 English muffins (lightly toasted)
  • 1/4 cup dried cranberries (finely chopped)
  • 1/8 cup slivered almonds (lightly toasted, optional)
  • 8 ounces vegan cream cheese (we like Kite Hill)
  • 3 tablespoon vegan butter
  • 1/4 cup confectioners' sugar
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon pure vanilla extract

    In a small mixing bowl, blend the cream cheese, butter, and confectioners' sugar.
