These Cucumber Tomato Bites are as beautiful as they are delicious. Ingredients
  • 2 English Cucumberrs
  • 12 cherry or grape tomatoes (halved)
  • 2 tablespoons extra virgin olive oil
  • salt and freshly ground black pepper
  • 8 ounces vegan cream cheese
  • 2 tablespoons vegan mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 large garlic clove (minced)
  • Choice of fresh herbs (thyme, basil, dill, parsley, terragon)

    Tomatoes

    Preheat your oven to 225° F.

    Place the halved cherry tomatoes on a baking sheet, cut side up. Drizzle each one with olive oil and season with a pinch of sea salt and freshly ground black pepper.

    Slow-roast the tomato halves in the oven for 20 to 25 minutes. Remove and allow them to come to room temperature.

    Cheese Mixture

    Combine the vegan cream cheese, mayo, lemon, and garlic in a food processor, pulsing until well combined and creamy. Place the mixture in a pastry bag fitted with a star tip and set aside.

    Peel the chilled cucumbers, in thin, alternating slices lengthwise to create a green-and-white striped effect. Then, cut each cucumber into 1-inch rounds — or 12 pieces for a total of 24.

    Assemble

    Place the cucumber rounds onto a serving platter and dab each with a clean, dry cloth or paper towel to remove any moisture.

    Pipe approximately one tablespoon of cream cheese mixture onto each cucumber slice, then top with one tomato half and garnish with fresh herbs. 

    Using a mixture of fresh herbs is a great way to add variety.
