Cucumber, tomatillos, celery, cilantro, parsley, arugula, and basil mingle with a creamy marinade of non-dairy yogurt, white wine, lemon, garlic, and olive oil, creating layers of tangy, herbaceous flavor. Blended until smooth and thoroughly chilled, it’s cool and silky with plenty of fresh character. 

Top each serving with diced red, green, and yellow bell peppers, red onion, and fresh basil for a colorful crunch that contrasts beautifully with the creamy soup. Gazpacho
  • 6 tomatillos (quartered)
  • 1 english cucumber (coarsely chopped)
  • 4 ribs celery (rough chopped)
  • 1/2 small white onion (quartered)
  • 1/2 cup cilantro, parsley, arugula (each)
  • 6 to 8 basil leaves
  • 1/2 cup plain yogurt
  • juice of half a lemon
  • 1 large garlic clove
  • 1/2 cup sherry wine
  • 1/2 green bell pepper (Reserve other half for garnish)
  • 1/8 cup extra virgin olive oil
  • 2 slices day old sour dough or white bread (use GF bread to make this gluten free.)
  • 1/2 teaspoon salt and freshly ground black pepper (each)

  • 1 cup cold water
  • 1/2 green bell pepper (small dice)
  • 1 red bell pepper (small dice)
  • 1 yellow bell pepper (small dice)
  • basil leaves or ribbons
Instructions

    Gazpacho

    Combine all of the ingredients in a blender and blend on high speed until smooth. Refrigerate.

    Meanwhile, dice the peppers for the garnish.

    Individual servings of green gazpacho garnished with bell pepper and basil.

    Serve individually, garnishing each serving, or from a soup pot or soup tureen, with the garnish served on the side. This gazpacho is delicious served with crusty bread.
