Ingredients
  • 2 cups small shell pasta
  • 1/2 cup green peas (fresh or frozen)
  • 1 rib celery (small dice)
  • 1/2 red bell pepper (seeded, small dice)
  • 1 large dill pickle (small dice)
  • 1 tablespoon fresh (or dried) parsley (minced)
  • Dressing
  • 1/2 cup vegan mayonnaise
  • 1 tablespoon prepared yellow mustard
  • 1 tablespoon white wine vinegar
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt and pepper (each)
  • 1/2 teaspoon sugar
  • 1/4 teaspoon dill
Instructions

    Cook the pasta according to the package instructions.

    Stir in the frozen peas during the last minute of cooking.

    Strain the pasta and pea mixture and rinse immediately with cold water to stop the cooking process. Strain well and transfer to a large bowl.

    Dice the celery, bell pepper, pickle, and parsley, and add them to the pasta. Gently toss.

    In a small mixing bowl, combine the vegan mayonnaise, mustard, vinegar, paprika, salt, pepper, sugar, and dill weed. Stir until creamy.
