Blend coconut milk, almond milk, vanilla, maple syrup, oil, salt, and xanthan gum in a blender and refrigerate for 1 hour.

Transfer the ice cream mixture to an Ice Cream Maker and prepare it according to the manufacturer's instructions.

Transfer the ice cream to a freezer-safe, sealable container and store in the freezer.

If you don't have an ice cream maker —no worries. Remove the mixture from the freezer every 20 minutes and whisk for 2 minutes before returning to the freezer. Repeat this for 2 to 3 hours, swapping out the whisk for a sturdy spoon when needed.Â
