Vegan Tostadas with Homemade Refried Beans

The homemade refried beans are the star of these satisfying Tostadas. Pinto beans slowly cook with onion, garlic, tomato paste, chili powder, cumin, coriander, and savory seasonings until tender, then mash them to your preferred consistency for a rich, flavorful base.
Spoon the warm beans over crispy tostada shells and load them up with lettuce, tomato, green onion, black olives, salsa, plant-based sour cream, and cheddar—or mix and match your toppings to make each one your own. Rinse the beans and place them in a 4-quart slow cooker.Â

Stir in the water, then add all of the other ingredients to the slow cooker and stir to combine.

Cover and cook for 5-6 hours on high or 10 hours on low, until the beans are completely tender.

Remove both bay leaves, then mash the beans with a potato masher until they reach your desired consistency. Adjust seasonings to taste.
