Blueberries are the perfect food in our book, filled with vitamins, minerals, and antioxidants. There’s nothing better than a warm, fresh-out-of-the-oven blueberry muffin sitting in front of you – unless, of course, two blueberry muffins were sitting in front of you. That would be better.
Blueberry Muffins

Perfectly sweet, light, and fluffy blueberry muffins.

Preheat oven to 400 degrees. Lightly grease muffin tins or use cupcake liners.

Combine flour (reserving two tablespoons), baking soda, baking powder, and salt in a medium-sized bowl.

In a large bowl, combine sugar, milk, oil, and vanilla. Mix well.
Add the flour mixture, 1/2 cup at a time, stirring just until the ingredients are blended and the dry flour is no longer visible.

Gently toss the blueberries with the two tablespoons of flour you reserved, then gently fold them into the batter.

Line a 12-cup muffin tin with paper liners. Portion the batter into each cup to 2/3 full. Sprinkle the tops of each muffin with raw sugar, if desired.
Lightly grease or spray the tops of the muffin tin with oil to prevent oversized tops from sticking (higher-quality nonstick pans may not require this).

Bake for 17-20 minutes, or until a toothpick in the center of a muffin comes out clean, then allow to cool completely.
