This delicious salad calls for brown rice, but substituting it with quinoa or wild rice would be equally good and healthful.

Instructions

  1. Add the salad ingredients to a serving bowl and set aside.

     

  1. Combine the lemon juice, vinegar, mustard, agave, salt, hot sauce, a dash of freshly ground black pepper, and olive oil in a small bowl or small jar with a lid, and whisk or shake until there is no separation.

  1. Pour the dressing over the salad and toss it all together—season with salt and pepper to taste.
