Pop the popcorn (enough to make 12 cups of popcorn).

Measure out 12 cups of popcorn into a large Roasting Pan.
Set it aside.Â

Preheat oven to 200 degrees F.

In a medium-sized saucepan, combine the vegan butter, brown sugar, salt, and corn syrup over medium heat. Bring the mixture to a boil, stirring often.
Continue to boil for 5 minutes. Remove from the heat and stir in the baking soda until well combined.

Pour the sugar mixture over the popcorn and toss in the peanuts now, if using.

Using a large spoon or spatula, stir the popcorn to coat it evenly.
