Instructions

  1. Heat a large saucepan over medium heat, then add the olive oil.

  1. Add the peppers and onion, then sauté for 5 to 7 minutes, until the vegetables are tender.

  1. Add the garlic and continue to cook for 1 to 2 minutes.

  1. Stir in the red wine (if using) and continue cooking, letting it reduce for 1 to 2 minutes so the alcohol can burn off. 

  1. Add the diced tomatoes and tomato sauce. Bring the mixture to a simmer, stirring often.

     

  1. Stir in parsley, oregano, basil, red pepper flakes, salt, and pepper seasonings. Reduce the heat and continue to simmer gently for about 1 hour, stirring often.

  1. While the sauce is simmering, prepare the rigatoni al dente according to the package directions. Strain the pasta and drizzle with a small amount of olive oil to keep it from sticking together, then set it aside.

     

  1. When the sauce has simmered for about an hour, stir in the Parmesan cheese and the non-dairy milk.

  1. Stir in the meatballs and bring the sauce back up to a simmer.

  1. Continue to simmer gently for 10 to 12 minutes, stirring often, until the meatballs are heated through.

     

  1. Gently fold in the rigatoni pasta. It's now ready to serve. Sprinkle individual servings with additional shredded Parmesan cheese and fresh chopped parsley if desired.
