Moist and delicious carrot cake cupcakes with cream cheese icing.

Instructions

  1. Preheat oven to 350°F. Use paper or foil cupcake liners for the best outcome.

    If you don't have liners, lightly spray the muffin pan with non-stick cooking spray.
  1. Whisk flour, sugar, baking powder, baking soda, cinnamon, and salt together in a medium bowl.

     

  1. In a large bowl, combine the applesauce, vanilla, and carrot. Add the dry ingredients to the wet mixture one cup at a time, stirring until just combined. Fold in 1/2 cup chopped nuts if using.

     

  1. Divide the batter between 12 cupcake liners and bake for 18 - 25 minutes, or until a toothpick inserted into the center comes out clean.

  1. Remove cupcakes from the oven and transfer them to a wire cooling rack. Cool completely before icing. Decorate with a signature "carrot" - or sprinkle additional chopped walnuts on top!
