Preheat the oven to 350°F and lightly grease an 8x5-inch bread pan.

Prepare the flax egg by mixing one tablespoon of ground flaxseed with three tablespoons of hot water. Set aside.

Sift all of the dry ingredients together in a large mixing bowl.

Add the non-dairy milk, coconut oil, and flax egg to the bowl and mix until well combined. Stir in the mashed banana until well combined. Fold in 3/4 cup of the mini-chocolate chips. Fold in the nuts (if using).

Pour the batter into the bread pan and sprinkle 1/4 cup of mini-chocolate chips over the top.

Place the dish in the oven and bake for 60 minutes, or until a toothpick inserted into the center comes out clean, with no wet batter remaining.Â

Allow the bread to cool before slicing. Seal in an airtight container to keep moist. Storing in the fridge is recommended if not consumed within 2 to 3 days.
