Using a blender or food processor, or a Mini Food Processor (perfect for this job), add the cheese and the pine nuts and blend for a few seconds.

Next, add the garlic and basil and pulse until everything is well combined.

Finally, drizzle in the olive oil while blending until you reach the desired consistency.
Your pesto is now ready to use!
This recipe makes roughly 1/3 of a cup of pesto, but it can easily be doubled, tripled, or more!

Tossing a couple of spoonfuls with spaghetti noodles is one of my favorite ways to enjoy this delicious pesto.

Refrigerate any unused portion and enjoy it within 7 to 10 days.

This pesto can also be frozen for ease of use. I often double the recipe, then use an ice cube tray to freeze several individual servings (1 to 2 tablespoons each). Once frozen, transfer the cubes to an airtight container. These will remain fresh for up to 3 months and are so convenient to use!
