Combine the tomatoes, basil, olive oil, vinegar, and garlic in a medium bowl. Season with salt and pepper to taste. Set the bowl aside to allow the flavors to come together.

In a small bowl, combine the vegan butter and the garlic. Â

Spread the buttery garlic mixture evenly on each slice of bread.Â
While Pagnotta bread is the best bread for bruschetta, it might not be easy to find unless you're in Italy. However, a nice ciabatta or other crusty sourdough bread will work perfectly. For a gluten-free version, use gluten-free bread.

On an outdoor or indoor grill pan, grill the bread slices, buttered side down, over medium-low heat for about 2 to 3 minutes, or until lightly browned. Turn and grill the opposite side for an additional 2 minutes, or just until toasted.

Spoon the topping over the grilled bread, top with additional balsamic, and garnish with a ribbon of fresh basil if desired.
This recipe can easily be doubled, tripled, or even quadrupled, depending on the size of your party. You know what they say, "The more, the merrier!"
