Purchase or make a batch of our baked tofu. You will need a total of 1.5 cups.

Heat the olive oil in a large skillet over medium heat. Add and saute the mushrooms for 2 to 3 minutes, stirring often.

Next, add the bell pepper and cook for 3 to 5 minutes more. Add the tofu and stir gently to combine.

Finally, add the corn, pine nuts, and sauce mixture to the skillet. Continue to cook until the sauce has reduced. Then remove the mixture from the heat, and stir in the cilantro.

Arrange the individual lettuce leaves on a platter, fill each leaf with approximately 1 - 2 tablespoons of the filling, and top with fresh avocado.
For gluten-free lettuce wraps, use gluten-free teriyaki sauce.
