Cupcakes:
Preheat oven to 350°F;

Mix the milk and cider vinegar in a large bowl and set aside to curdle for a few minutes. Then add the oil, sugar, maple syrup, and vanilla, and mix until well combined.

In a large mixing bowl, sift together the dry ingredients, then add the wet ingredients and mix until smooth.

Measure the batter into a cupcake tray lined with liners and fill them about 3/4 full.

Bake for 15-17 minutes or until a toothpick placed in the center of one cupcake comes out clean. Cool completely before frosting.
Makes 12 cupcakes.

Mix the softened butter and powdered sugar in a medium-sized bowl. Next, add the cinnamon, vanilla, and non-dairy milk. Continue to mix until smooth, creamy, and fluffy, about 2 minutes.
