Heat a large soup pot over medium-high heat and add the olive oil.

Add the onion and sauté for 3 minutes. Then, add the garlic and sauté for another minute.

Next, add the basil, tomatoes, and red pepper flakes and bring the soup to a boil.

Reduce the heat to medium-low and simmer for 10 minutes, stirring occasionally.

Add the cream cheese and stir until it melts, then remove the pot from the heat.

Using an Immersion Hand Blender, mix until smooth.
If you don't have an immersion hand blender, let the soup cool slightly, then ladle it into a blender. Be careful - the mixture will be hot! Remove the center part of the lid to allow the steam to escape. Cover the opening with a clean towel and blend until the mixture is smooth. Return the soup mixture to the pan.

Over medium heat, stir in the lemon juice, milk, salt, and freshly ground white (or black) pepper.Â

Stir continuously until the soup comes to a simmer - about 2 to 3 minutes more.
Remove from the heat and serve. Garnish with extra basil or croutons if desired.
