Instructions
-
Egg Yolk
Combine all the above ingredients except the butter in a small saucepan and whisk until well blended.
Â
-
Place the pan over medium heat and continue whisking until the mixture bubbles - about 5 minutes. Cook for another 30 seconds, then remove from the heat and stir in the vegan butter.Â
-
Cover the yolk sauce to keep it warm and set it aside.
-
Egg White
Use a Tofu Press, or a clean kitchen towel to drain off the excess water from the tofu.
-
Next, using a sharp knife, cut the block of tofu into 4 even slices, then use a Biscuit Cutter to cut the tofu into rounds, OR cut away the corners with your knife to make a round or oval shape. Then, with a small cutter (or the tip of a spoon), cut a hole in the center of each, measuring about 1 1/2 inches in diameter.
(If presentation isn't that important to you, you can fry the slabs of tofu without shaping them and drizzle the yolk over the top — they will still be delicious).
-
Melt the butter over medium heat in a non-stick skillet (preferably a cast-iron skillet). Add the tofu cutouts and fry until lightly browned and crisp around the edges, about 2 to 3 minutes per side.Â
-
Assemble the fried "egg"
Place the tofu on a plate, then fill the center with the "egg yolk mixture." **
Season with freshly ground black pepper, and enjoy!
