This vegan fried egg is a fun and delicious plant-based twist on a classic breakfast favorite. A lightly browned tofu "egg white" is paired with a velvety, golden yolk made with savory seasonings and black salt, creating the familiar look, texture, and flavor that many vegans have missed.

Instructions

  1. Egg Yolk

    Combine all the above ingredients except the butter in a small saucepan and whisk until well blended.

     

  1. Place the pan over medium heat and continue whisking until the mixture bubbles - about 5 minutes. Cook for another 30 seconds, then remove from the heat and stir in the vegan butter. 

  1. Cover the yolk sauce to keep it warm and set it aside.

  1. Egg White

    Use a Tofu Press, or a clean kitchen towel to drain off the excess water from the tofu.

  1. Next, using a sharp knife, cut the block of tofu into 4 even slices, then use a Biscuit Cutter to cut the tofu into rounds, OR cut away the corners with your knife to make a round or oval shape. Then, with a small cutter (or the tip of a spoon), cut a hole in the center of each, measuring about 1 1/2 inches in diameter.

    (If presentation isn't that important to you, you can fry the slabs of tofu without shaping them and drizzle the yolk over the top — they will still be delicious).

  1. Melt the butter over medium heat in a non-stick skillet (preferably a cast-iron skillet). Add the tofu cutouts and fry until lightly browned and crisp around the edges, about 2 to 3 minutes per side. 

  1. Assemble the fried "egg"

    Place the tofu on a plate, then fill the center with the "egg yolk mixture." **

    Season with freshly ground black pepper, and enjoy!
