Description
These fries are slightly sweet, perfectly seasoned, soft on the inside, and crispy on the outside. Serve them with the roasted red pepper dip for the perfect flavor combination.

Sweet Potato Fries
Preheat oven to 400 degrees F. Line a baking sheet with parchment paper. If using foil, lightly spray with non-stick cooking spray.

In a large bowl, stir together the oil and all of the seasonings. Add the potatoes to the bowl. Use your hands or a spatula to toss and coat the potatoes gently.
Spread the fries in a single layer and bake for 15 minutes, then flip and bake an additional 10 to 15 minutes until crisp.

Red Pepper Dip
Meanwhile, put the roasted red bell pepper, ketchup, cilantro, smoked paprika, and red pepper flake into a Food Processor
 or a Mini Food Chopper and blend until mostly smooth.

Season to taste with salt and freshly ground black pepper.

Remove the potato wedges from the oven and arrange them on a plate.

Serve with dipping sauce.
