Fill a large stockpot with lightly salted water and heat to a boil over high heat.

Clean and remove the core of the cauliflower. Cut the larger florets into 2-inch pieces, then add them to the boiling water. Cook for 8 to 10 minutes, or until the cauliflower is fork-tender.

Drain the cauliflower well and place it in the bowl of your stand mixer or a large heat-safe mixing bowl.
Pull a couple of florets for garnish and set aside. If serving guests, this will show the dish is cauliflower and not potatoes.

Add the butter, milk, salt, and pepper, and mix until creamy and smooth. I use the wire whip attachment of my stand mixer, starting on low speed and then increasing to medium-high until creamy.
If you don't have a stand mixer, use a hand mixer.

Adjust seasonings. Garnish with reserved cauliflower florets and fresh herbs.
