  1. Whisk together the vinegar, mustard, and maple syrup in a mixing bowl.

  1. While whisking, slowly drizzle in the olive oil until there is no more separation.

  1. Season to taste with salt and pepper.

  1. If the dressing has been refrigerated, bring it to (almost) room temperature and whisk before using.
