Instructions

  1. Mix the flour, baking powder, cinnamon, sugar, and salt in a medium mixing bowl.

  1. Stir in the milk, water, applesauce, melted butter, and vanilla until well incorporated. Don't over-mix; the batter should be slightly lumpy.

  1. Set it aside, and preheat your waffle iron.

     

  1. Carefully open the preheated waffle iron and spray the top and bottom of the iron with a thin, even layer of nonstick cooking spray.

  1. Add about 1/2 cup of the batter or the amount suggested by the manufacturer. Use a rubber spatula to spread the mixture to within 1/4 inch of the edge, then close the lid.

    1. Cook the waffles according to your waffle maker’s instructions, typically 3 to 5 minutes per waffle.
    2. Carefully open the waffle maker and check for doneness. If a waffle sticks, close the lid and cook for another 30 seconds to 1 minute before checking again.
    3. When fully cooked, the waffle should release easily from one side of the waffle maker.
    4. Use a fork to gently lift and remove it.
    5. Lightly coat the waffle maker with additional cooking spray as needed, and repeat until all of the batter has been used.
  1. Serve with fresh fruit or berries and warm maple syrup. For added sweetness, dust with powdered sugar just before serving.
